    salt

    butter at room temperature

    castor sugar
  • FUDGE LAYER
  • 75

    butter
  • 45
    ml
    golden syrup
  • 397
    g
    Nestlé condensed milk
  • 125
    ml
    castor sugar
  • CHOCOLATE TOPPING
  • 200
    g
    dark chocolate
 

Method

 
1. Sift flour, cornflour and salt together twice. Beat butter with an electric hand beater until light and fluffy. Add sugar gradually, beating continuously. 2. Add the flour and work it in with your fingertips to until a fairly stiff dough is formed. 3. Press dough lightly into a 29 x 20 cm rectangular tin. Smooth over the top with back of a spoon. Prick with a fork and bake at 190 ºC for 10 minutes. Reduce temperature to 160 ºC and bake for 15 minutes more. 4. Boil all the fudge layer ingredients in a small saucepan for 5 minutes, until thick and fudge-like. Spread over baked shortbread base and leave to cool and set. 5. Melt the chocolate in the microwave or over warm water. Spread evenly over the fudge layer. Mark into diamonds or squares before chocolate hardens. Cut once set.
