Millionaire shortbread

    castor sugar
  • 250
    ml
    cake flour
  • 30
    ml
    cornflour
  • 2
    ml
    salt
  • 75
    g
    butter
  • 50
    ml
    golden syrup
  • 397
    g
    condensed milk
  • 150
    g
    dark chocolate
 

Method

 
Preheat the oven to 180 °C.
Beat together the butter and sugar until light and fluffy.
Sift in the dry ingredients and mix.
Press dough into a greased 20 cm x 24 cm rectangular tin.
Prick with a fork and bake for 10 minutes. Reduce heat to 160 °C and bake for a further 10 minutes.
Place the butter, golden syrup and condensed milk in a saucepan over high heat.
Boil for five minutes, stirring constantly to prevent burning.
Spread over the baked shortbread and allow to set.
Melt the chocolate and spread over the fudge layer.
Cut into squares just before the chocolate hardens.
