Beat together oil, sugar, eggs, salt and essence in a food processor.
Sift flour, Maizena, bicarbonate of soda, baking powder and cinnamon and mix into egg mixture.
Fold in remaining ingredients and pour into a greased ring pan.
Bake in preheated oven for 30 minutes at 180 ºC.
Reduce heat to 130 ºC and continue baking for one hour.
Mix together butter and icing sugar.
Mix in cream cheese, a spoonful at a time, until smooth. Add vanilla essence.
Ice cooled cake with
three quarters of the icing. Colour remaining icing with food colouring of your choice and pipe rosettes on top in the shape of æ21Æ, or use a flower or other decoration of your choice.
