Ingredients (4)

500 g bread — Spanish, stale
6 Tbs olive oil — or lard
4 cloves garlic — cloves, peeled and sliced
150 g bacon — or chorizo, diced

Method:

Cube the bread before you want to use it, put in a bowl and sprinkle with a little slightly salted water.

Using your hands, mix well and set aside in a cool place overnight.

Heat the oil or lard in a heavy based saucepan (preferably cast iron) and fry the diced bacon (or chorizo) until it just begins to crisp, before adding the garlic and frying this until just turning golden.

Now add the soaked bread to the pan and fry until golden – serve with white grapes, spicy sausage and some fried eggs.
