Ingredients (10)

250.00 g bulgar wheat — or couscous
2.00 spring onions — bunch, chopped
2.00 garlic — cloves, crushed
3.00 celery — chopped
50.00 ml fresh mint — chopped
30.00 ml fresh coriander — chopped
2.00 tomatoes — peeled, deseeded, chopped
1.00 cucumber — English variety, peeled, deseeded, finely diced
80.00 ml lemon juice — fresh
150.00 ml fresh chillies — 573

Method:

Soak the bulgar wheat in cold water for 8 hours (10 minutes in boiling water for couscous). Rinse and drain well. Add all remaining ingredients and chill for several hours before serving.
Serves 8.
