    bulgar wheat or couscous
  • 2
    bunches spring onions, chopped
  • 2
    cloves garlic, crushed
  • 3
    stalks celery with leaves, chopped
  • 50
    ml
    chopped fresh mint
  • 30
    ml
    chopped fresh coriander leaves
  • 2
    firm ripe tomatoes, peeled, seeded and chopped
  • 1
    English cucumber, peeled seeded and finely diced
  • 80
    ml
    fresh lemon juice
  • 150
    ml
    olive oil
 

Method

 
Soak the bulgar wheat in cold water for 8 hours (10 minutes in boiling water for couscous). Rinse and drain well. Add all remaining ingredients and chill for several hours before serving. Serves 8.
