    butter

    kg
    minced lamb
  • 100
    g
    blanched almonds
  • 100
    g
    walnuts
  • 50
    g
    pine nuts
  • 350
    g
    basmati rice, cooked
  • 60
    g
    dried apricots, soaked
  • salt and freshly ground black pepper
  • 5
    ml
    ground cumin
  • 5
    ml
    ground coriander
  • lemon juice
 

Method

 
1. Heat the butter in a saucepan and fry the meat until it changes colour, mixing with a fork. Stir in the nuts and fry for 3 minutes longer. 2. Add the rice to the meat and fry for another minute until well coated with fat. Drain the apricots, chop and add. Season to taste and add cumin and coriander. Mix well. 3. Wash the turkey thoroughly and rub it both inside and out with a little lemon juice. Stuff the turkey loosely with the mixture.
