Microwaved peanut muffins

    milk
  • 125
    ml
    peanut butter

    oil
  • 1
    egg
  • 125
    ml
    peanuts, finely chopped
 

Method

 
Sift the cake flour, baking powder, salt and nutmeg together in a large mixing bowl. Add the sugar. Beat the milk, peanut butter, oil and egg together. Add the liquid to the dry ingredients and mix well. Add the chopped peanuts and mix. Spray a microwave muffin pan with non-stick spray and fill each hollow with two thirds of the batter. Bake for about 4 minutes at 100 per cent power. Repeat until all the batter has been used. Serve with butter, or golden syrup or honey if you have a sweet tooth. The muffins can also be baked for 20 minutes at 200 ºC (400 ºF) in a conventional oven.
