Microwave sweet potatoes with brandied marmalade glaze

    sweet potatoes, peeled and dipped in orange juice
  • 30
    ml
    water
  • 125
    ml
    orange marmalade
  • 125
    ml
    orange juice
  • 30
    ml
    fresh ginger, grated
  • 5
    ml
    French mustard
  • 15
    ml
    brandy
  • 15
    ml
    butter
 

Method

 
1. Microwave potatoes with water in a microwave/serving bowl for about 10 minutes on high. (potatoes should be firm). Drain well and set aside. 2. Mix marmalade, orange juice, ginger and mustard in a bowl and boil in microwave for 2 minutes. 3. Stir in brandy and butter. Pour over potatoes. 4. Microwave on high for 8-10 minutes until tender. Serve as a side dish. Serves 4.
