Ingredients (8)

1.00 kg sweet potato — peeled and dipped in orange juice
30.00 ml water
125.00 ml marmalade — orange
125.00 ml orange juice
30.00 ml fresh ginger — grated
5.00 ml french mustard
15.00 ml brandy
15.00 ml butter

Method:

1. Microwave potatoes with water in a microwave/serving bowl for about 10 minutes on high. (potatoes should be firm). Drain well and set aside.
2. Mix marmalade, orange juice, ginger and mustard in a bowl and boil in microwave for 2 minutes.
3. Stir in brandy and butter. Pour over potatoes.
4. Microwave on high for 8-10 minutes until tender. Serve as a side dish.
Serves 4.
