Ingredients (13)

2.00 green pepper — strips
2.00 onion — sliced
2.00 garlic — cloves, crushed
12.00 ml oil
5.00 ml freshly ground black pepper
2.00 ml fresh ginger
7.00 ml curry powder
7.00 ml turmeric
2.00 kg chicken — pieces
2.00 stock cube — chicken
2.00 tomatoes — peeled and diced
1.00 apples — peeled and diced
200.00 g peas — fresh

Method:

Place the green pepper, onion, garlic and oil in a microwave dish. Microwave for 7 minutes on 100 percent power, stirring every 2 minutes.
Blend the seasonings and rub into the chicken portions. Arrange the chicken in the dish with the onion mixture, with the thinner parts closer to the centre of the dish and the thicker parts closer to the sides. Dissolve the stock cubes in 250 ml of hot water, mix in the diced tomato and pour over the chicken. Cover and microwave for 20 minutes on 70 percent power. Sprinkle the diced apple over the top and add the peas. Cover and microwave for about 10 minutes on 70 percent power.
Serve with brown rice and a salad. Serves 6-8.
