Mickey's spaghetti

    spaghetti
  • 2
    onions, sliced
  • 2
    green or red peppers, seeded and cut into pieces
  • 4
    cloves garlic, crushed
  • oil
  • 250
    g
    fresh mushrooms, sliced (optional)
  • 410
    g
    tomato and onion mix
  • 410
    g
    ratatouille
  • 5
    ml
    sugar
  • pinch ground ginger
  • salt and freshly ground back pepper
  • grated cheese (optional)
 

Method

 
Cook the spaghetti in rapidly boiling salted water until just tender and drain. Set aside. Sauté the onion, green pepper and garlic in a little heated oil until glossy. Add the mushrooms and stir-fry until lightly browned. Add the tomato and onion mix and ratatouille and season with sugar, ginger, and salt and pepper to taste. Reduce the heat and simmer until heated through. Transfer the spaghetti to a serving platter and spoon the tomato mixture on top. Serve with cheese if desired. Serves 6.
