Mexican pasta salad

    pasta shapes
  • 30
    ml
    French salad dressing
  • salt and freshly ground black pepper
  • 2
    spring onions, sliced into rings
  • 1
    red pepper, seeded and diced
  • 45
    ml
    chopped fresh coriander leaves (optional)
  • SALAD DRESSING
  • 1
    grated rind and juice of a lemon
  • 30
    ml
    mayonnaise
  • 150
    ml
    sour cream
  • 30
    ml
    tomato sauce
  • 5
    ml
    paprika
  • 5
    ml
    cumin (jeera)
  • 2
    ripe avocado pears, diced
 

Method

 
Cook the pasta until done and drain. Moisten with the French salad dressing, season with salt and pepper and mix. Cool and add the vegetables and coriander leaves. Whisk the salad dressing ingredients together and add the pasta. Mix lightly and cool. Skin, stone and dice the avocado pears just before serving. Lightly mix into the salad. Serves 4-6.
