Ingredients (13)

250.00 g pasta — shapes
30.00 ml french salad dressing
sea salt and freshly ground black pepper
2.00 spring onions — sliced into rings
1.00 red pepper — seeded and diced
45.00 ml fresh coriander — chopped, optional
SALAD DRESSING
1.00 lemon — zest and juice
30.00 ml mayonnaise
150.00 ml sour cream
30.00 ml tomato sauce
5.00 ml paprika
5.00 ml cumin
2.00 avocado — diced

Method:

Cook the pasta until done and drain. Moisten with the French salad dressing, season with salt and pepper and mix. Cool and add the vegetables and coriander leaves. Whisk the salad dressing ingredients together and add the pasta. Mix lightly and cool. Skin, stone and dice the avocado pears just before serving. Lightly mix into the salad.
Serves 4-6.
