5.00 ml canola oil — or olive oil
0.00 0 onion — peeled and finely chopped
0.00 0 garlic — crushed
0.00 0 green pepper — chopped
0.00 0 tomatoes — chopped
0.00 0 sausages — viennas, sliced
410.00 g baked beans — in tomato sauce
0.00 0 freshly ground black pepper — to taste
5.00 ml curry powder — mild
100.00 g cheese, grated — lower fat

Method:

Heat the oil and fry the onion, garlic and green pepper until soft. Add the tomato and simmer for another 3-5 minutes.
Add the rest of the ingredients, except the cheese and toast, and cook for 5 minutes, stirring occasionally. Add 1/3 of the cheese and heat until the cheese has melted. Pile generously onto the dry toast and sprinkle with the rest of the grated cheese. Serve hot, using half a slice of toast per person.
