Mexican bean snack

    canola or olive oil

    1 onion, peeled and finely chopped

    1 clove or garlic, crushed

    ½ green pepper, seeded and chopped

    1 tomato, chopped

    2 'lite' viennas, sliced

    1 tin baked beans in tomato sauce

    freshly ground black pepper to taste

    mild chilli or curry powder

    lower-fat cheese, grated

    2 slices of hot toast
 

Method

Heat the oil and fry the onion, garlic and green pepper until soft. Add the tomato and simmer for another 3-5 minutes. Add the rest of the ingredients, except the cheese and toast, and cook for 5 minutes, stirring occasionally. Add 1/3 of the cheese and heat until the cheese has melted. Pile generously onto the dry toast and sprinkle with the rest of the grated cheese. Serve hot, using half a slice of toast per person.
