Meringues with orange-chocolate sauce

  • 1
    quantity prepared simple meringue mixture (see recipe)
  • 20
    ml
    cocoa
  • 250
    ml
    double-thick cream
  • 100
    g
    dark chocolate
  • 10
    ml
    orange rind
 

Method

1 hour + drying time
 
Preheat oven to 120 ºC. Dissolve cocoa in 20 ml hot water and cool. Fold into half of meringue mixture. Spoon or pipe 20 oblong shapes of vanilla and chocolate meringue on to greased and floured baking paper. Bake in the oven for 1 hour. Switch off oven and allow to dry for 1-2 hours. Sandwich meringues together with thick cream. Melt chocolate and stir in orange rind. Drizzle over meringues and serve. Makes 20.
