    large egg whites
  • 110
    castor sugar

Preheat oven to 140 ºC.
Whisk the egg whites until stiff, then add the sugar 5 ml at a time, whisking on full speed until glossy.
Cover a baking sheet with a piece of greaseproof paper.
Place 12 individual dessert spoonfuls of the mixture on to the paper, swirling them with the back of the spoon.
Bake in preheated oven for 45 minutes to 1 hour, until firm and crisp.
Lift one to check that it comes off the paper easily.
Remove from the oven and set aside until meringues have cooled slightly, then lift them off the paper gently.
