    small ginger loaf

    pear halves

    ml
    sweet wine
  • 250
    ml
    thick custard
  • 3
    medium eggs
  • 125
    ml
    castor sugar
 

Method

 
Preheat oven to 180 ºC. Prepare 6 small ramekins or ovenproof dishes. Cut ginger loaf into cubes and place in ramekins. Pour sweet wine over. Place pear slices over ginger loaf slice, pour custard over pears and leave to soak for about 20 minutes. Meanwhile, separate the eggs and put egg whites into a clean bowl. Whisk until soft peaks form, gradually adding castor sugar. Continue whisking until stiff peaks form. Spoon over the custard and peak with the back of a spoon. Bake for 8 to 10 minutes until lightly golden. Serve immediately.
