Meringue-topped berries

  • 500
    g
    fresh or frozen raspberries
  • 45
    ml
    balsamic vinegar
  • 30
    ml
    sugar
  • 6
    large egg whites
  • 125
    ml
    castor sugar
  • brown sugar for sprinkling
 

Method

 
Preheat oven to 160 ºC. Place raspberries, balsamic vinegar and sugar in a small ovenproof frying pan. In a large bowl, whisk egg whites and castor sugar until soft peaks form (soft meringue). Pile meringue in centre of berries and sprinkle with brown sugar. Bake for 15 to 20 minutes, or until meringue is lightly browned. Serve from pan, with vanilla cake or biscotti.
