Meringue nests with lemon curd and berries

Whip the cream until stiff and spoon into the meringue nests.
Top with a spoonful of lemon curd and freshly sliced strawberries.
Sprinkle with lemon zest and serve immediately.

Make your own lemon curd filling
Heat 200 ml castor sugar, 125 ml freshly squeezed lemon juice and 50 g butter over a low heat.
Whisk in two egg yolks and 15 ml cornflour.
Stir constantly over a low heat until thickened.
Stir in the zest of two lemons and allow to cool.
Spoon into a sterilised bottle and refrigerate until ready to use.
You could also make lime or orange curd by substituting fresh lime or orange juice for the lemon juice.
