Meringue ice cream and berry dessert

    good quality vanilla ice cream
  • 300
    g
    fresh or frozen berries
  • 10
    meringue nests, broken
  • extra berries to garnish
 

Method

Line a 22cm springform pan with clingfilm. Allow the ice cream to soften, but take care not to let it melt.

Spoon a third of the ice cream into the prepared pan. Sprinkle half the berries over the ice cream, followed by half the broken meringues. Repeat the layers, ending with the last third of ice cream. Cover with clingfilm and place in the freezer for about 3 – 4 hours.

Remove the dessert carefully from the springform pan, arrange extra berries on top and slice to serve.
