Melt-in-the-mouth cookies

    extra-large eggs, whisked

    almond essence
  • 500

    cake flour
  • 375
    ml
    cornflour
  • 15

    baking powder

    ml
    salt
  • 200
    g
    milk chocolate, melted
 

Method

 
Preheat the oven to 180ºC (350ºF). Spray a baking sheet with non-stick spray. Beat the butter until light and creamy. Add small quantities of the sugar at a time while beating continuously. Add the eggs and beat well. Add the almond essence and mix well. Sift together the cake flour, cornflour, baking powder and salt. Add to the butter mixture and mix well. Roll into walnut-size balls, arrange on the prepared baking sheet and flatten with a fork. Bake for 10-12 minutes or until straw-coloured. Cool and remove from the baking sheet. Dip the bottom of each cookie in the melted chocolate and place upside down on a wire rack in the fridge to set. Store in airtight containers. Makes 80 cookies.
