Melt-in-the-mouth biscuits

  • 225
    g
    butter
  • 125
    ml
    icing sugar
  • 5
    ml
    vanilla essence
  • 60
    ml
    cornflour, sifted
  • 500
    ml
    cake flour, sifted
  • baking paper
  • melted chocolate
 

Method

 

Cream together butter and icing sugar.
Preheat the oven to 180 °C
Beat in vanilla essence, cornflour, cake flour and mix to form a soft dough.
Place in cookie press and press out shapes on a baking sheet lined with baking paper and lightly greased with butter or sprayed with non-stick spray.
Bake for 10 minutes until pale brown.
Leave to cool and sandwich biscuits together with melted chocolate.
