Melon soup with smoked salmon

    kg
    large ripe sweet melon
  • 250
    ml
    vegetable or weak chicken stock
  • salt and milled pepper
  • pinch cayenne pepper
  • 10
    ml
    grated fresh ginger
  • 300
    ml
    natural yoghurt
  • 125
    ml
    cream
  • 100
    g
    smoked salmon
  • mint leaves to garnish
 

Method

Peel, halve and remove pips from melon. Using a melon baller, scoop out 8 balls from melon. Purée remaining melon flesh. Add chicken stock, salt, black pepper, cayenne pepper and ginger and chill. Stir yoghurt into soup, add melon balls and adjust seasoning. Chill well. Cut salmon into slivers and add a little more black pepper. Ladle soup into bowls, divide salmon and mint equally between them and serve.
