Melon soup with smoked salmon

Ingredients (9)

1.00 kg melon
250.00 ml stock — vegetable or chicken
salt and freshly ground black pepper
cayenne pepper — pinch
10.00 ml fresh ginger — grated
300.00 ml yoghurt — natural
125.00 ml cream
100.00 g salmon — smoked
fresh mint — to garnish

Method:

Peel, halve and remove pips from melon. Using a melon baller, scoop out 8 balls from melon.
Purée remaining melon flesh. Add chicken stock, salt, black pepper, cayenne pepper and ginger and chill.
Stir yoghurt into soup, add melon balls and adjust seasoning. Chill well.
Cut salmon into slivers and add a little more black pepper.
Ladle soup into bowls, divide salmon and mint equally between them and serve.

TOTAL KILOJOULE COUNT: 3 600 kJ (860 Cal). A portion: 900 kJ (215 Cal).
