Melon salad with pears, nuts and blue cheese

  • SALAD DRESSING

    ml
    white wine vinegar
  • 60
    ml
    walnut or sunflower oil
  • 60
    ml
    olive oil
  • SALAD
  • 3
    pears, skinned and cored
  • 1
    juice of a lemon
  • 700
    g
    winter melon, seeded, peeled and sliced
  • 125
    g
    blue cheese, crumbled
  • 25
    g
    walnuts, chopped and roasted
  • salt and freshly ground black pepper
 

Method

 
Shake the salad dressing ingredients together in a screw-top jar and set aside. Slice the pears thinly and sprinkle with the lemon juice. Arrange the pear and melon slices, blue cheese and nuts on a serving platter or four individual plates and moisten with the salad dressing. Season with salt and black pepper. Serves 4.
