Ingredients (12)

10.00 ml fresh chillies — 573
15.00 ml mustard — seeds
7.00 ml dried chilli flakes
2.00 garlic — cloves, crushed
4.00 black mushrooms — large
40.00 g porcini mushrooms — dried, soaked
125.00 ml water — boiled
125.00 baby mushrooms
10.00 ml wholegrain mustard
30.00 ml sherry — medium cream
6.00 oyster mushrooms
fresh parsley — handful, chopped

Method:

Heat oil in a pan and add mustard seeds. When the seeds begin to pop, toss in the chilli flakes, garlic and black mushrooms.
Stir-fry for about 3 minutes.
Add porcini mushrooms (and liquid), baby mushrooms and mustard.
Cook over a medium heat for about 6 minutes.
Add sherry and cook until mushrooms are soft.
Add oyster mushrooms and cook over a high heat for about 4 minutes.
Scatter with fresh herbs and serve as a side dish, on top of mashed potato, pasta or couscous, or toasted Italian bread.
