    baby marrows, trimmed

    baby onions, peeled
  • 250
    g
    fresh mushrooms, wiped clean
  • MARINADE
  • 100
    ml
    balsamic vinegar
  • 3
    lemons, juice
  • 300
    ml
    olive oil
  • 10
    ml
    fresh thyme, chopped
  • 30
    ml
    Italian parsley, chopped
  • 3
    cloves garlic, sliced
  • 4
    bay leaves
  • 3
    celery stalks, trimmed and chopped
  • 10
    green olives
  • 410
    g
    butter beans, drained
  • salt and coarse black pepper
 

Method

 
MARINADE: Mix all ingredients. Blanch prepared vegetables in boiling water for a minute or two, then immerse in cold water for about 5 minutes. Toss vegetables in marinade, cool and transfer to a large bowl. Cover and refrigerate for a few days to allow flavour to develop. Drizzle with olive oil, if desired, and serve with crusty bread.
