Ingredients (8)

1.00 carrots — peeled, chopped
200.00 g cauliflower — cut into florets
200.00 g tomatoes — chopped
420.00 g butter beans — tinned
0.00 sea salt and freshly ground black pepper
60.00 g baby spinach
0.00 fresh basil — handful
3.00 tortillas — flour

Method:

Steam the carrot and cauliflower until done and drain to remove any excess water.
Add the tomatoes and beans, bring to the boil and simmer for another 5 minutes or until the mixture is fragrant and has reduced.
Season with salt and pepper.
Add the spinach and basil and heat until the leaves have wilted.
Spoon the mixture into the tortillas and serve immediately.
