    ml
    couscous
  • 10
    ml
    insant vegetable stock or 2 cubes
  • 375
    ml
    boiling water
  • 45
    ml
    ready-made pesto
  • 15
    ml
    lemon juice
  • 250
    g
    cherry tomatoes
  • 2
    avocado pears, sliced
  • 150
    g
    feta cheese, drained
  • fresh herbs
 

Method

1. Place couscous in a bowl, pour boiling stock over, cover with a plate and leave for 5 minutes.
2. Mix together pesto and lemon juice, gradually mix into the couscous stirring gently with a fork to separate the granules.
3. Add cherry tomatoes, sliced avocado pears and feta, toss gently, stir in fresh herbs.
4. Spoon into a container to store.
