Mediterranean ‘bread’ pizza

Ingredients (12)

For the pizza base:
4 bread — slices
2 garlic — cloves grated
3 Tbs fresh chillies — 573
TOPPING:
140 g sun-dried tomatoes
1 mozzarella cheese
dried oregano
8 salami — slices, cooked
calamata olives
1 onion — large, sliced and fried
TO SERVE:
rocket
fresh basil
fresh chillies

Method:

Preheat the oven to 200°C. Flatten the bread slices with a rolling pin.

Mix the garlic and olive oil and brush the slices of bread with it.

Fry each slice on both sides in a griddle pan until the brown etching lines appear on your bread.

Mash the sundried tomato up with a fork and then smear it on one side of the bread. Add the mozzarella and all the toppings.

Pop in the oven at 220°C until the cheese in melted and bubbly.

Serve with fresh rocket, basil and chopped chillies.
