Mediterranean beef rolls

It’s quick, it’s easy and most of the ingredients are already in your store cupboard.

    small beef schnitzels
  • 2
    garlic, crushed
  • 45
    sun-dried tomato pesto
  • 100
    feta, crumbled
  • 1
    large egg, beaten
  • flour, for coating
  • 100
    dried breadcrumbs
  • oil, for frying
Servings: Change Serving


Top each beef schnitzel with garlic, pesto and feta. Roll up and secure with a toothpick. Dip each roll into the egg, then into the flour and then the breadcrumbs.

Heat a thin layer of oil in a large frying pan and fry the rolls for 10 to 15 minutes, until golden brown and cooked through. Serve with baby potatoes and salad.
