Ingredients (11)

600.00 g cape whiting — steaks or hake fillets
30.00 ml oil
1.00 onion — sliced
1.00 red pepper — cored, deseeded and sliced
1.00 green pepper
2.00 garlic — cloves
410.00 g tomatoes — chopped
1.00 cayenne pepper
125.00 ml wine — white
125.00 ml water
4.00 bay leaves

Method:

1. Pre-heat oven to 180 degrees celcius.
2. Cut fish into large chunks. Heat oil and fry fish lightly on both sides. Remove
and keep warm.
3. Add onions, peppers and garlic to pan, sauté for about 5 minutes until soft. Add tomatoes, cayenne pepper and wine, bring
to the boil and simmer for five minutes.

4. Layer fish and vegetables in a casserole dish; add bay leaves and easoning.
5. Cover with pastry, brush pastry with egg wash and bake in oven for 30-45 minutes.

6. Serve hot with a salad.
