1. Pre-heat oven to 180°C.2. Cut fish into large chunks. Heat oil and fry fish lightly on both sides. Remove and keep warm.3. Add onions, peppers and garlic to pan, sauté for about5minutes until soft.
Add tomatoes, cayenne pepper and wine, bring to the boil and simmer for five minutes.
4. Layer fish and vegetables in a casserole dish; add bay leaves and seasoning.5. Cover with pastry, brush
pastry with egg wash and bake in oven for 30-45 minutes.6. Serve hot with a salad.
