Meatballs with avocado sauce

    fresh breadcrumbs

    mince

    dried mixed herbs

    tomato sauce

    butter
  • 2
    onions, sliced
  • 50
    ml
    cake flour
  • 400
    ml
    chicken stock
  • 3
    avocados, skinned, stoned and cut into thick slices
 

Method

 
Heat the oil in a pan. Fry cayenne pepper for 1 minute in the oil. Add the onion and garlic and sauté until soft. Soak the breadcrumbs in the milk. Add the remaining ingredients, including the onion mixture and mix well. Shape into balls. Cover and stand for one hour. Heat the oil and butter in a pan. Sauté the onion until soft. Add the meatballs and brown. Sprinkle the meatballs with cake flour, while turning them continuously. Slowly add the chicken stock. Stir continuously and bring to the boil. Add the avocado slices and mix gently. Serve on a bed of pasta. Serves 5.
