Meatballs in spicy sauce

    pork mince
  • 3
    slices bread, made into breadcrumbs
  • 2
    large eggs, lightly beaten
  • 50

    flour
  • 45
    ml
    oil
  • 1
    onion, chopped
  • 2
    cloves garlic, crushed
  • 5
    ml
    dried origanum
  • 5
    ml
    chilli powder
  • 5
    ml
    cumin
  • 5
    ml
    paprika
  • 400
    g
    chopped tomatoes
  • 10
    ml
    sugar
  • 400
    ml
    vegetable stock
  • 410

    beans in tomato sauce
  • 1
    bunch spinach, washed and shredded
 

Method

35 minutes
 
1. Rinse samp. Place in a saucepan, cover with water and bring to the boil. Reduce heat and simmer until tender. 2. Meanwhile, mix mince, breadcrumbs, egg and seasoning together. Shape into small balls and roll in flour. Refrigerate. 3. Heat oil and sauté onion until tender. Add garlic, origanum and spices and fry for 30 seconds. Add tomatoes, sugar and vegetable stock and bring to the boil. Reduce heat and simmer for five minutes. 4. Remove meatballs from fridge and drop carefully into the sauce. Allow to simmer gently for 10 minutes. Add the beans in tomato sauce and stir gently. Cook for a further five minutes. 5. Cook spinach in a little boiling water until wilted, stir into hot cooked samp and dish up onto four serving plates. Spoon meatballs and sauce over the samp and serve.
