Ingredients (17)

500.00 g samp
400.00 g pork mince
3.00 bread slices — breadcrumbs
2.00 eggs — large, slighly beaten
50.00 ml flour
45.00 ml oil
1.00 onion — chopped
2.00 garlic — cloves, crushed
5.00 ml dried oregano
5.00 ml chillies — powder
5.00 ml cumin
5.00 ml paprika
400.00 g tomatoes — chopped
10.00 ml sugar
400.00 ml stock — vegetable
410.00 g beans in tomato sauce
1.00 spinach — bunch, shredded

Method:

1. Rinse samp. Place in a saucepan, cover with water and bring to the boil. Reduce heat and simmer until tender.
2. Meanwhile, mix mince, breadcrumbs, egg and seasoning together. Shape into small balls and roll in flour. Refrigerate.
3. Heat oil and sauté onion until tender. Add garlic, origanum and spices and fry for 30 seconds. Add tomatoes, sugar and vegetable stock and bring to the boil. Reduce heat and simmer for five minutes.
4. Remove meatballs from fridge and drop carefully into the sauce. Allow to simmer gently for 10 minutes. Add the beans in tomato sauce and stir gently. Cook for a further five minutes.
5. Cook spinach in a little boiling water until wilted, stir into hot cooked samp and dish up onto four serving plates. Spoon meatballs and sauce over the samp and serve.
