  • 250
    g
    cooked lean leftover meat (lamb, pork or beef)
  • 1
    small head lettuce
  • 2
    tomatoes, cut into wedges
  • 1
    English cucumber, thinly sliced
  • 3
    carrots, cut julienne
  • 2
    stalks celery, cut into pieces
  • GINGER-YOGHURT DRESSING
  • 150
    ml
    sour cream or plain yoghurt
  • 1
    lemon, grated rind and juice
  • 30
    ml
    honey
  • 15
    ml
    fresh ginger, grated
  • 2
    ml
    salt
  • freshly ground black pepper to taste
 

Method

 
Mix dressing ingredients and allow to stand to develop flavour. Slice cooked, cold meat into thin strips. Prepare salad vegetables as desired. Mix lightly together and arrange each vegetable separately in a salad bowl on top of lettuce. Pour over ginger-yoghurt dressing and serve salad well chilled.
