Meat loaf with dried fruit

    boiling water

    mushroom soup powder

    mince
  • 1
    small onion, finely chopped

  • 250
    ml
    oats
  • 125
    ml
    seedless raisins
  • 9
    pieces dried fruit such as pears, peaches, apples (optional)
  • 1
    extra-large egg
 

Method

 
Preheat the oven to 180ºC (350ºF). Spray a 29 x 11 x 7 cm loaf tin with non-stick spray. Mix the oil and boiling water with the mushroom soup powder until the mixture is lump free. Add the remaining ingredients and mix well. Turn the mixture into the prepared loaf tin, spreading it evenly. Cover with aluminium foil and bake for 1 hour and 20 minutes or until done. Remove the foil after 1 hour. Serve with tomato sauce or a salad. Makes one large loaf.
