Mealie meal porridge vetkoekies

    water
  • pinch salt
  • 60

    mealie meal
  • 2
    eggs
  • 220
    g
    cake flour
  • 7
    ml
    baking powder
  • pinch salt
  • 50
    ml
    milk
  • oil for shallow-frying
 

Method

 
Bring 300 ml of the water and salt to the boil. Blend the remaining water with the mealie meal and mix with the boiling water. Boil for about 20 minutes or until cooked. Stir occasionally. Whisk the eggs well. Add the mealie meal porridge to the whisked eggs and mix. Sift the cake flour, baking powder, and a pinch of salt together. Add to the mealie meal porridge mixture and mix well. Add the milk to form a fairly slack batter. Heat the oil in a pan. Drop spoonfuls of the mixture into the oil and fry until golden brown and cooked inside. Makes about 25 vetkoekies.
