    large green pepper, finely chopped

    stalks celery, chopped

    medium-sized carrots, sliced

    butter, melted

    cake flour

    baking powder
  • 5

    salt
  • 5
    ml
    thyme
  • 1
    ml
    cayenne pepper
  • 1
    ml
    nutmeg
  • 25

    sugar
  • 3
    extra-large eggs, lightly beaten
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease two 24 x 25 cm tins with margarine. Bring the milk to the boil in a large saucepan. Add the mealie meal by the spoonful while stirring continuously. Remove from the stove. Cool slightly. Sauté the vegetables in the melted butter until soft. Add to the mealie meal mixture and mix well. Combine the remaining ingredients, except the eggs. Add to the mealie meal mixture, alternating with the beaten eggs and blend well. Divide the mixture between the two prepared tins. Cover and bake for 30 minutes or until baked through. Cut into squares and serve hot or cold with homemade tomato sauce. Makes about 30 squares.
