Mealie meal bites

    g
    mealie meal
  • 2
    ml
    salt
  • 450
    ml
    water
  • little cayenne pepper
  • 2
    eggs, whisked
  • 60
    g
    fresh breadcrumbs
  • oil for frying
 

Method

 
Spray a medium-sized baking tray with non-stick spray. Blend the mealie meal and salt with a little of the water to form a paste. Bring the remaining water to the boil and add the mealie meal paste, stirring continuously till the mixture comes to the boil. Simmer for about 20 minutes till the porridge is done. Season with a little cayenne pepper, if desired. Turn the mixture into the prepared baking tray, pressing it evenly unto the tray. Cool. Cut the porridge into squares, dip in the whisked egg and roll in the breadcrumbs. Fry in heated oil till brown. Serve with tomato sauce, if desired. Makes 30 squares.
