Mealie cakes with savoury toppings

    Litres
    water
  • 375
    ml
    maize meal
  • 65
    ml
    Parmesan cheese
  • 65
    ml
    oil
  • salt to taste
  • TOPPINGS
  • pilchard, tomato and onion stew
  • chakalaka
  • creamed spinach
 

Method

 
Bring water to the boil and gradually add maize meal. Stir until well mixed. Cover and simmer gently for 30 minutes. Spoon mixture into a greased, shallow baking tray. Allow to cool and set, preferably overnight. Cut square or diamond shapes from set porridge. Shallow-fry both sides in hot oil. Place maize meal cakes on a serving platter and spoon over topping of your choice.
