Mealie and sausage bake

    onion, sliced
  • oil for frying

    medium-sized potatoes, diced

    sweetcorn

    chicken stock cube

    frankfurters, cut into pieces

    mustard powder

    ml
    paprika
  • 1
    ml
    nutmeg

    parsley, finely chopped
  • salt and pepper to taste

    soft breadcrumbs
  • 50

    Cheddar cheese, grated
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a 24 cm ovenproof dish with margarine. Sauté the onion in oil until soft. Add the diced potato and fry lightly. Drain the sweetcorn, reserving the liquid. Add the chicken stock cube and reserved liquid to the onion and potato mixture. Simmer until the diced potato is soft. Add the frankfurters, sweetcorn and seasonings and simmer until heated through. Spoon into the prepared dish. Combine the breadcrumbs and cheese and sprinkle on top. Bake for 20-30 minutes or until the cheese has melted. Serve with a salad. Serves 4.
