    mealie meal

    butter, melted
  • 250
    ml

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a 23 cm ring tin with non-stick spray. Sauté the onion in a little oil until translucent. Stir in the mince and fry until done. Season with salt and black pepper and add the tomato purée. Simmer for about 10 minutes. Turn the mince mixture into the prepared ring tin and set aside. Whisk two of the eggs and mix with the sweetcorn. Pour over the mince mixture in the tin. Sift the cake flour, mealie meal, baking powder and salt together. Whisk together the melted butter, remaining egg and milk and add small quantities at a time to the flour mixture. Mix well and spoon on top of the sweetcorn. Bake for 30-40 minutes or until the mealie crust is golden brown and done. Cool slightly before turning out onto a plate so the mince faces up. Arrange cherry tomatoes or tomato wedges in the centre of the ring. Serves 6.
