Ingredients (15)

3.00 potatoes — large, peeled
1.00 onion — finely chopped
1.00 green pepper — finely chopped
oil
500.00 g beef mince
1.00 tomatoes — ripe, skinned and grated
3.00 ml dried thyme
2.00 ml nutmeg — ground
salt
freshly ground black pepper
CHEESE SAUCE
15.00 ml butter
15.00 ml flour — cake, sifted
250.00 ml milk
100.00 g cheddar cheese — grated
50.00 ml breadcrumbs — fresh

Method:

Preheat the oven to 180 ºC (350 ºF).
Boil potatoes, cut into 1 cm thick slices, in salted water until soft. Arrange in a 26 cm ovenproof dish.
Sauté the onion and green pepper in a little oil until soft.
Add the mince a little at a time and brown.
Add the grated tomato and seasonings, including salt and pepper to taste.
Simmer for about 5 minutes before spooning over the potato slices.
Melt the butter in a pan and add the sifted cake flour. Blend to form a smooth paste.
Heat for about 1 minute or until the flour is cooked. Remove from the heat and slowly add the milk while stirring continuously.
Return to the heat and heat until the sauce comes to the boil and thickens.
Add the Cheddar cheese, reserving a little to sprinkle on top.
Blend well until the cheese has melted. Pour over the mince mixture.
Blend the remaining Cheddar cheese with the breadcrumbs and sprinkle over the dish.
Bake for about 20 minutes or until the dish is heated through and the cheese has melted.
Serve with a green salad.
