  • strawberry jam
  • a few fresh strawberries

Preheat the oven to 180 ºC.

Sift the dry ingredients together twice. Mix the water, vanilla essence and mayonnaise together and slowly add to the dry mixture. Mix well, but do not overdo it.

Spoon into two 20 cm cake tins and bake for 30 to 45 minutes or until a testing skewer comes out clean. Turn out on a wire rack and cool completely.

Whip the cream until stiff and add the castor sugar and vanilla essence. Spread a layer of strawberry jam over one of the cakes, followed by a layer of cream. Place the other cake on top. Spoon the remaining cream on top and decorate with the whole, fresh strawberries.
