  • 5
    ml
    Dijon mustard
  • 5
    ml
    white wine vinegar
  • salt and freshly ground black pepper to taste
  • 300
    ml
    sunflower oil
  • 15
    ml
    lemon juice
 

Method

 
Place the egg, mustard, vinegar and seasoning in a food processor and process until blended. With the processor on full speed, gradually add the oil through the feed tube in a steady stream. When the mayonnaise is thick, remove the lid, add the lemon juice and process to combine. Check the seasoning and store in a covered container in the fridge for up to 3 days.
