    yolks of extra-large free range eggs
  • 20
    ml
    white wine vinegar
  • 2
    ml
    mustard powder
  • 5
    ml
    crushed garlic
  • 5
    ml
    salt
  • ground black pepper
  • 30
    ml
    lemon juice
  • 125
    ml
    sunflower oil
  • 125
    ml
    olive oil
 

Method

 
Place the egg yolks, a drop of vinegar, the mustard powder, garlic, salt, pepper and lemon juice in your food processor.
Process these ingredients rapidly to combine them thoroughly before adding oil.
Add the oil in a steady stream, with the motor running, until the emulsion thickens.
When thickened, taste for seasoning and add more salt and pepper if necessary.
Serve drizzled over cos lettuce, Parmesan shavings, blanched asparagus or slices of toasted ciabatta.
Makes 375 ml
