Mashed potato bake with sweetcorn

    potatoes, peeled and boiled until tender
  • 30
    ml
    milk
  • 30
    ml
    butter
  • 410
    g
    cream-style sweetcorn
  • 5
    ml
    mustard powder
  • salt and paprika to taste
  • 3
    extra-large eggs, whisked
  • 250
    ml
    grated Cheddar cheese
 

Method

 
Preheat the oven to 180ºC (350ºF). Spray a medium sized ovenproof dish with non-stick spray. Mash the potatoes and add the milk and butter, mixing well. Add the remaining ingredients except the cheese, mix and spoon into the prepared oven dish. Sprinkle with the cheese and bake until firm and the cheese has melted. Serve with fried sausage and a salad. Serves 4.
