Ingredients (6)

50.00 g coriander — seeds
50.00 g black peppercorns — whole
36.00 g cumin — seeds
20.00 g cloves — whole
20.00 cardamom pods — peeled
10.00 ml cinnamon — ground

Method:

1. Grind whole seeds in a coffee blender or using a pestle and mortar.
2. Blend ground mixture with cinnamon and use as required.
3. Store in an airtight container to last for up to 1 month.
VARIATIONS
Add dried ground chillis for extra strength, or ginger for extra zing and turmeric for deeper colour. Add brown sugar if using with tomatoes or tomato paste.
