    coriander seeds
  • 50
    g
    black peppercorns
  • 36
    g
    cumin seeds
  • 20
    g
    whole cloves
  • 20
    peeled cardamom pods
  • 10
    ml
    ground cinnamon
 

Method

 
1. Grind whole seeds in a coffee blender or using a pestle and mortar. 2. Blend ground mixture with cinnamon and use as required. 3. Store in an airtight container to last for up to 1 month. VARIATIONS Add dried ground chillis for extra strength, or ginger for extra zing and turmeric for deeper colour. Add brown sugar if using with tomatoes or tomato paste.
