    chicken pieces
  • 10
    ml
    masala
  • 5
    ml
    ground cumin
  • 5
    ml
    ground coriander
  • 5
    ml
    turmeric
  • 15
    ml
    crushed garlic
  • 15
    ml
    ginger, grated
  • 1
    green chilli, finely chopped
  • salt and pepper to taste
  • 30
    ml
    vegetable oil
  • 80
    ml
    vegetable oil for basting
 

Method

 
1. Trim chicken pieces. Mix together spices, garlic, ginger chilli, salt and pepper. 2. Add oil and mix to a paste. Rub paste onto chicken and leave for 1 hour. 3. Place chicken in baking tray, baste with oil and roast at 180 ºC for 45 minutes or until chicken is cooked. 4. Serve on a platter with tomatoes and lemon wedges.
