Marshmallow Squares

Ingredients

  • 60
    ml
    butter
  • 200
    g
    marshmallows
  • 75
    g
    puffed rice
  • 125
    g
    dried apricots, finely chopped
  • 50
    g
    unsalted peanuts
  • icing sugar for rolling
 

Method

Slowly heat the butter and marshmallows until completely melted. Add the puffed rice, apricots and peanuts and mix well. Turn the mixture into a greased, square 22 cm dish. Press firmly into the dish with the back of a spoon and leave to cool completely until set. Cut into squares and roll in icing sugar. Pack into a plastic bag and fasten tightly. Makes 15-20 squares.
