Heat the milk and the chopped Mars bars in a small saucepan over gentle heat. Stir often until you have a smooth chocolate milk. Allow to cool.
Cream the butter and castor sugar. Mix in the vanilla essence.
Add the eggs one at a time, beating well after each addition.
In a separate bowl mix the flour, cocoa powder and salt.
Fold in half the flour mixture into the creamed butter and sugar, then fold half the chocolate milk into creamed butter and sugar. Repeat.
Line a muffin tray with 12 paper cases and divide mixture between them.
Bake at 180°C for 10 to 15 minutes.
Heat the cream until it simmers. Remove from the heat and add the chopped Mars bars. Stir while the chocolate melts until you have a smooth ganache.
Allow to cool slightly.
Top the cupcakes with the ganache and a slice of Mars.
Substitute the Mars bars with Bar-ones if you like – they will be just as gorgeous.
