Marmalade rice pudding

    ml
    marmalade
  • 25
    ml
    water
  • 50
    ml
    chopped mixed nuts
  • 90
    g
    sultanas, soaked in 100 ml sherry
  • 600
    g
    cooked rice
  • 250
    ml
    custard
 

Method

Turn on the oven grill. Spray a large ovenproof bowl or four small ones with non-stick spray. Mix the marmalade, water, nuts and soaked sultanas. Heat slowly till the marmalade has just melted. Place the rice in the prepared bowl or bowls. Pour the custard over, then the marmalade mixture. Grill for 2-3 minutes. Serve immediately. Serves 4.
